There’s no need to leave your sandwiches in an elevator, because our new and improved toasted lamb leg steak sandwiches are here to take your lunch – or dinner – to the next level. Sorry. But all jokes aside, our Mini Char-Grilled Mediterranean Lamb Sandwiches are the best thing since sliced bread. So, give them a try for yourself at home and thank us later.

Ingredients

Makes 12

4 small lamb leg steaks, cut in half lengthwise

3 tablespoons garlic infused olive oil

Pinch chilli powder

Salt and freshly milled black pepper

1 courgette, cut into long thin slices

1 red onion, thinly sliced

1 shop bought char-grilled red peppers in brine, cut into slices

3 tablespoons shop bought hummus

1 sourdough loaf, cut into 8 slices

24 pitted black and green olives

12 cocktail sticks

Method
  • Preheat a griddle pan or a prepared barbecue to medium-high.
  • In a small bowl mix together 1 tablespoon of oil, chilli powder and seasoning Brush over the lamb steaks on both sides. Cook for 1 minute on each side, remove to a plate and keep warm.
  • Brush the courgette and red onion with the 1 tablespoon of oil and cook for 2-3 minutes on each side until tender. Warm the roasted peppers for a few minutes. Season.
  • Brush the bread slices with the remaining oil on both sides and toast in the griddle pan for 2 minutes.
  • Remove from the pan and spread each slice with the hummus, then add the  lamb, courgette, red onion and pepper on one slice. Top with the final slice of bread, then cut each sandwich into 3 equal portions.
  • Thread 2 olives onto each cocktail stick and press into the mini sandwiches before serving.
