It's hard to believe you can have these Lamb Burgers with Mint Yogurt and Tomato Relish ready in under 30, but we've said it before and we'll say it again: lamb is as easy as it is delicious. Make them with mates, throw them together for a get-together and impress everyone, or –- our personal favourite -- eat them all yourself.

Serves 4

400g lean lamb mince

1 large garlic clove, crushed

1 teaspoon ground cumin

1 teaspoon ground coriander

Pinch of dried chilli flakes

1 egg

A little salt and freshly milled black pepper

For the mint yogurt

100ml natural Greek style yogurt

1 teaspoon honey

Pinch of dried chilli flakes

2 teaspoons freshly chopped mint2 teaspoons oil

To serve

4 brioche rolls, lightly toasted

Salad leaves

4 radishes, sliced

16 slices of cucumber

2 tablespoons prepared tomato relish

  • For the burgers, place the lamb into a bowl with the garlic, cumin, coriander, chilli flakes, egg and seasoning. Mix well. Roll the mixture into 4 equal size balls and then flatten into burger shapes.
  • Heat the oil in a non-stick pan on the hob and cook the burgers for 6-8 minutes on each side, or until any meat juices run clear.  Alternatively, cook the burgers under a preheated moderate grill or on a prepared barbecue for the same cooking time. For the mint yogurt, in a small bowl mix all the ingredients together.
  • To assemble, arrange salad leaves onto each toasted brioche roll, top with the mint yogurt, burger, radish and cucumber slices and a dollop of tomato relish before serving.
