Serves 4

4 lean lamb leg steaks, approx 500g, cut into 2.5cm cubes

1 ripe avocado, peeled and stoned

2 teaspoons freshly chopped coriander

Juice of ¼ lime

Salt and freshly milled black pepper

1 teaspoon olive oil

1 small red onion, finely diced

1 garlic clove, crushed

Pinch of chilli flakes

2 tablespoons prepared fresh tomato salsa

4 soft tortilla wraps

½ tablespoon soured cream or créme fraîche

Extra freshly chopped coriander, to garnish

  • In a small bowl, smash the avocado with a fork, mix in coriander, lime juice and season.
  • Heat the oil in a non-stick frying pan until hot and fry the onion until soft.
  • Add the lamb and cook for 5-8 minutes until tender.
  • Stir in the garlic, chill, salsa and seasoning. Cook for 2 minutes.
  • Spoon the avocado onto the base of each tortilla, top with the lamb mix, soured cream and extra freshly chopped coriander. Roll up and serve immediately.
