If you weren't planning to have mates over, you sort of have to now, because these Lamb Burgers with Mint Yogurt and Tomato Relish are too deliciously adorable to not want to show off. Also, you know what else is adorable? 25 minute cooking times, from fridge to plate. Yes, please.

Makes 16

400g lean lamb mince

1 small shallot, finely chopped

2 tablespoons Worcestershire sauce

1 teaspoon Dijon mustard

A large pinch of chilli powder

Salt and freshly milled pepper

1 tablespoon oil

16 mini burger buns

16 small pieces of Feta cheese, crumbled

8 tablespoons prepared beetroot relish

16 fresh mint leaves, chopped

16 cocktail sticks

  • In a large bowl mix together the lamb, shallot, Worcestershire sauce, mustard, chilli powder.
  • Divide the mixture into 16 walnut-sized balls and flatten into burger shapes.
  • Heat the oil in a large non-stick pan until hot or grill. Gently cook the burgers for 2-3 minutes on each side until firm to the touch and any meat juices run clear. Alternatively, cook the burgers under a moderate grill or on a prepared barbecue.
  • Spread the base of each burger bun with the relish.  Add the Feta, more relish then top with the burger lid. Secure the burger with a cocktail stick and serve.

Chef's Tip:

Try the burger using a variety of combinations such as:

 Plum chutney with Halloumi cheese and fresh coriander leaves.

 Onion relish with Cheddar cheese and fresh parsley leaves.

  Mozzarella cheese, cherry tomatoes, fresh basil leaves
