If you want something to spice up your usual pizza night, then these Turkish Pides are just the thing to do it. With a host of fresh ingredients like tomato, peppers and onions they’re healthy too. Have yourself a Turkish pizza feast on the table in just over half an hour.

Serves 4

300g lamb mince

1 large onion, peeled and finely chopped

1 green pepper, deseeded and finely chopped

2 tomatoes, deseeded and finely chopped

2 tablespoon tomato purée

1 teaspoon ras el hanout

1 fresh red or green chilli pepper, deseeded and finely chopped

Salt and pepper

Flour, for dusting

4 ready-made, rolled pizza bases (usually found alongside chilled pastry)

1 egg, beaten

2 tablespoons pine nuts

200g Greek yogurt

1 tablespoon lemon juice

3 tablespoons chopped fresh mint

  • Pre-heat the oven to gas mark 7/220°C and remove two oven racks.
  • In a large bowl mix the mince, onion, pepper, tomatoes, tomato purée, ras el hanout, chilli pepper and seasoning until smooth. Divide mixture into four.
  • Dust the work surface with a little flour and unroll the pizza bases, cutting each into two. Transfer each to a sheet of greaseproof paper. Brush the edges with beaten egg and spread the filling lengthwise, leaving the edges free. Roll the edges slightly inwards and shape the ends to form points. Brush them again with beaten egg and sprinkle with pine nuts.
  • Slide everything (pides + paper) directly onto the oven racks, and bake for 12 mins until golden brown.
  • Meanwhile, mix the yogurt, lemon juice, 1 tablespoon of chopped mint and seasoning together. If liked, add 1 tablespoon of rapeseed or olive oil to loosen the sauce.
  • Serve the pides hot, sprinkled with the remaining chopped mint alongside the yogurt sauce and a salad.
